Chili Lime Chicken Fajita Salad

Ingredients

Marinade/Dressing

  • 3 Tbsp olive oil
  • 100 ml (just over 1/3 cup) freshly squeezed lime juice
  • 2 Tbsp cilantro, chopped
  • 2 cloves garlic, crushed
  • 1 tsp brown sugar
  • 3/4 tsp red chili flakes (or red pepper flakes)
  • 1/2 tsp ground cumin
  • 1 tsp salt

Salad

  • 4 chicken thigh fillets, skin removed (no bone)
  • 1/2 yellow bell pepper, deseeded & sliced
  • 1/2 red bell pepper, deseeded & sliced
  • 1/2 an onion, sliced
  • 5 cups Romaine, washed and dried
  • 2 avocados, sliced
  • extra cilantro leaves to garnish
  • sour cream, (optional) to serve

Instructions

  • Marinade & Reserve: Whisk marinade ingredients. Pour half over chicken fillets; marinate for 2+ hours. Refrigerate remaining marinade for dressing.
  • Grill Chicken: Heat 1 tsp oil in a grill pan over medium-high. Grill chicken in batches until golden and cooked. Rest chicken aside.
  • Sauté Veggies: Wipe pan, add 1 tsp oil. Fry pepper and onion strips until tender.
  • Assemble Salad: Slice chicken. Combine salad leaves, avocado, cooked peppers, onions, and chicken strips in a bowl.
  • Dress & Enjoy: Drizzle with reserved marinade/dressing, toss, and serve. Garnish with optional cilantro and sour cream.
