Ingredients

  • 2 slices of diced bacon
  • 1 small sweet diced onion
  • 7 oz sirloin, cubed
  • 1 diced bell pepper
  • 2 minced garlic cloves
  • 1 Tbsp smoked paprika
  • 1/4 to 1/2 tsp chipotle chili powder (this gives it heat)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp BBQ sauce
  • 2 Tbsp ketchup
  • 1 Tbsp dijon mustard
  • 1 Tbsp brown sugar
  • 2 (22 ounce) cans baked beans (recommend: Bush’s Grillin’ Beans)
  • 2 sliced of bacon, for topping (optional)

Instructions

    1. Preheat Oven & Brown Sirloin: Preheat your oven to 400°F (200°C). In a pan on the stovetop, brown the sirloin for 3-5 minutes, then set aside.
    2. Cook Bacon: Heat a large, oven-safe skillet over medium-low heat. Add the bacon and cook until it’s brown, crisp, and most of the fat has rendered.
    3. Sauté Aromatics & Spices: Stir in the onion, bell pepper, and garlic. Cook, stirring frequently, until the vegetables soften (about 5 minutes). Stir in the paprika, chili powder, salt, and pepper, cooking for another 1-2 minutes.
    4. Add Sauces: Stir in the vinegar, BBQ sauce, ketchup, mustard, and brown sugar until thoroughly combined.
    5. Simmer Beans: Add the baked beans directly from the can to the skillet. Bring the mixture to a boil, then remove from heat. Taste the beans and adjust seasoning (add more salt, pepper, or heat) if desired.
    6. Optional Bacon Topping: If you wish, lay a few strips of cooked bacon on top of the beans before baking.
    7. Bake: Transfer the skillet (or its contents to an oven-safe dish if needed) to the preheated oven. Bake for 30-35 minutes, or until the beans are bubbly.
    8. Cool & Serve: Remove from the oven and let cool slightly before serving.
