Ingredients
Tzatziki Sauce
- 1/2 cup finely grated cucumber
- 1 cup thick whole milk greek yogurt
- 1 Tbsp lemon juice
- 1/2 Tbsp extra-virgin olive oil
- 1 garlic clove, grated
- 1/4 tsp salt
- 1 Tbsp chopped fresh dill
- 1 /2 Tbsp chopped fresh mint
- 1/2 Tbsp chopped fresh basil
Chicken
- 8–10 boneless skinless chicken thighs
- 3 cloves garlic, minced
- 1 lemon, zested & juiced
- 3 Tbsp greek yogurt
- 3 Tbsp olive oil
- 1 tsp salt
- 1/2 Tbsp chopped fresh parsley
- 1/2 Tbsp chopped fresh thyme
- 1/2 Tbsp chopped fresh oregano
Salad Dressing
- 1/4 cup extra-virgin olive oil
- 3 Tbsp red wine vinegar
- 1 garlic clove, minced
- 1/2 tsp dried oregano, more for sprinkling
- 1/4 tsp Dijon mustard
- 1/4 tsp salt
- ground pepper
Salad
- 1 English cucumber, cut lengthwise, seeded, and sliced 1/4 inch thick
- 1 green bell pepper, chopped into 1 inch pieces
- 2 cups halved cherry tomatoes
- 5 oz feta cheese, cut into 1/2 inch cubes
- 1/3 cup thinly sliced red onion
- 1/3 cup pitted Kalamata olives
- 1/3 cup fresh mint leaves (optional)
Instructions
Tzatziki Sauce
- Place the cucumber on a towel and gently squeeze out a bit of the excess water.
- In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill and mint, if using. Chill until ready to use.
Chicken
- Mix all ingredients except chicken in a glass dish. Place chicken pieces in the mixture; cover and marinate in the refrigerator for 2-3 hours.
- Preheat your outdoor or indoor grill on high heat and lightly oil the grate.
- Place chicken on grill and discard the marinade. Cook until chicken is no longer pink and the juices run clear, or until internal temperature reaches at least 165F.
Salad Dressing
- In a jar with a lid or small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt and several grinds of pepper.
- Shake/whisk until well combined & set aside until about to assemble your salad.
Salad
- In a large bowl, combine cucumber, green pepper, cherry tomatoes, feta cheese, red onions and olives. Drizzle with the dressing and very gently toss. Sprinkle with a few generous pinches of oregano and top with mint leaves.
- On your plate, add a dollop of your Tzatziki sauce & spread around a bit. Add your salad on top. Salt and pepper to taste.
- Add your chicken on top or to the side and enjoy!
