Ingredients

Tzatziki Sauce

  • 1/2 cup finely grated cucumber
  • 1 cup thick whole milk greek yogurt
  • 1 Tbsp lemon juice
  • 1/2 Tbsp extra-virgin olive oil
  • 1 garlic clove, grated
  • 1/4 tsp salt
  • 1 Tbsp chopped fresh dill
  • 1 /2 Tbsp chopped fresh mint
  • 1/2 Tbsp chopped fresh basil

Chicken

  • 810 boneless skinless chicken thighs
  • 3 cloves garlic, minced
  • 1 lemon, zested & juiced
  • 3 Tbsp greek yogurt
  • 3 Tbsp olive oil
  • 1 tsp salt
  • 1/2 Tbsp chopped fresh parsley
  • 1/2 Tbsp chopped fresh thyme
  • 1/2 Tbsp chopped fresh oregano

Salad Dressing

  • 1/4 cup extra-virgin olive oil
  • 3 Tbsp red wine vinegar
  • 1 garlic clove, minced
  • 1/2 tsp dried oregano, more for sprinkling
  • 1/4 tsp Dijon mustard
  • 1/4 tsp salt
  • ground pepper

Salad

  • 1 English cucumber, cut lengthwise, seeded, and sliced 1/4 inch thick
  • 1 green bell pepper, chopped into 1 inch pieces
  • 2 cups halved cherry tomatoes
  • 5 oz feta cheese, cut into 1/2 inch cubes
  • 1/3 cup thinly sliced red onion
  • 1/3 cup pitted Kalamata olives
  • 1/3 cup fresh mint leaves (optional)

Instructions

Tzatziki Sauce

  • Place the cucumber on a towel and gently squeeze out a bit of the excess water.
  • In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill and mint, if using.  Chill until ready to use.

Chicken

  • Mix all ingredients except chicken in a glass dish.  Place chicken pieces in the mixture; cover and marinate in the refrigerator for 2-3 hours.
  • Preheat your outdoor or indoor grill on high heat and lightly oil the grate.
  • Place chicken on grill and discard the marinade.  Cook until chicken is no longer pink and the juices run clear, or until internal temperature reaches at least 165F.

Salad Dressing

  • In a jar with a lid or small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt and several grinds of pepper.
  • Shake/whisk until well combined & set aside until about to assemble your salad.

Salad

  • In a large bowl, combine cucumber, green pepper, cherry tomatoes, feta cheese, red onions and olives.  Drizzle with the dressing and very gently toss.  Sprinkle with a few generous pinches of oregano and top with mint leaves.  
  • On your plate, add a dollop of your Tzatziki sauce & spread around a bit.  Add your salad on top.  Salt and pepper to taste.  
  • Add your chicken on top or to the side and enjoy!
