Ingredients
- 1 cup blackberries, frozen and divided
- 1 cup blueberries, frozen and divided
- zest and juice of 2 limes, divided
- 1 sprig fresh mint, leaves only
- 1 (13.6 oz) can unsweeted coconut cream, divided
- 1/4 cup water
- 2 Tbsp agave syrup
- 3 cups ice
- toasted coconut flakes (optional)
Instructions

Muddle the Base: Divide 1/4 cup each of blackberries and blueberries, half of the mint leaves, and the juice of a lime between two serving glasses. Use a muddler or the back of a spoon to gently press the mixture until the berries release their juices and the mint is fragrant. Set aside.

Blend the Coconut Layer: In a blender, combine 1 1/4 cups unsweetened coconut cream, 1/4 cup water, agave to taste, and a handful of ice. Blend until the mixture is thick and smooth, adding more water if needed.

Add the Berry Swirl: In a separate small blender or food processor, combine the remaining berries, a small amount of coconut cream, and a splash of lime juice. Pulse a few times to create a chunky berry mixture.

Combine & Serve: Pour the blended coconut mixture into the glasses over the muddled berry base. Top with the berry swirl mixture. Enjoy immediately.
