Homemade Mayonnaise

This simple recipe proves that delicious condiments can be made right in your own kitchen.  It is incredibly easy to make at home and takes less than one minute to blend!

Ingredients

  • 1 whole egg
  • 1/2 Tbsp lemon juice
  • 1 tsp white wine vinegar
  • 1/4 tsp Dijon mustard
  • 1/4 tsp salt
  • 1 cup avocado oil (or light-flavored olive oil)

Instructions

  • Prepare for Blending: In the jar that came with your immersion blender, add the egg, lemon juice, vinegar, mustard, and salt. Slowly pour the oil on top of these ingredients, allowing it to settle for about one minute.

  • Initial Emulsification: Insert your immersion blender into the jar, pressing it firmly down to the bottom. Ensure the blender head fully covers the egg yolk. Turn the blender on and keep it pressed against the bottom of the jar for at least 10-15 seconds without moving it. You will see the mayonnaise begin to emulsify and thicken from the bottom up.

  • Full Emulsification: Once a significant portion of the mayonnaise has emulsified and thickened, slowly and steadily move the immersion blender up and down throughout the mixture to fully combine all the ingredients until smooth and creamy.

  • Store: Give the finished mayonnaise a final stir. Transfer it to an airtight storage container and refrigerate.
