Ingredients

  • 2 lbs Butternut Squash peeled and cut into 1” pieces
  • 2 Tbs olive oil
  • 1/4 cup diced sweet onion
  • 2 small garlic cloves minced
  • 1 tsp fresh thyme
  • 1/2 tsp dried rosemary
  • 1 tsp fresh sage finely chopped
  • Kosher salt to taste
  • Fresh ground black pepper
  • 1 lb bacon cooked and copped (divided)
  • 8 oz cream cheese softened
  • 4 cups fresh spinach chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese

Instructions

  • Preheat oven to 400 F.
  • In a large ovenproof skillet over medium heat add olive oil then add diced onion and saute until the onions have softened (4-5 minutes).  Add minced garlic and cook until fragrant (About 1-2 minutes longer)
  • Add Butternut squash to the pan and season with salt and pepper.  Stir to mix with onion and garlic and saute the squash until slightly softened. Roast in the preheated oven for 25 minutes or until the Butternut Squash is fork tender.
  • While the butternut squash is roasting prepare the spinach, bacon and cheese mixture
  • In a medium bowl add softened cream cheese, spinach, mozzarella cheese, 1/4 cup of parmesan cheese, ½ of the bacon (save the remaining half  of the bacon pieces to garnish on top of the squash), rosemary, thyme, and sage.  Mix everything well.
  • Remove the butternut squash from the oven then add the spinach/cream cheese mixture to the butternut squash and mix everything together.
  • Top with remaining ¼ cup of parmesan then place in the oven to bake for 15-20 minutes or until the cheese mixture is melted and slightly browned on top.
  • Optional, broil for 3-5 minutes to get golden brown crust over the cheese.  Watch closely and be careful not to burn the squash and cheese mixture.
  • Top with fresh ground pepper and finely diced bacon.
