Ingredients
Pickled Cucumbers
- 1 Persian cucumber, thinly sliced
- 1 Fresno chile or red jalapeno, thinly sliced
- 1/2 cup water
- 1/2 c plus 2 tbsp lime juice, divided
- 2 1/2 tsp brown sugar, divided
- salt
Cabbage Mixture
- 3 cups purple & green cabbage mix with carrots
- 2 Tbsp cilantro, finely chopped
- 1 Tbsp basil, finely chopped
- 2 tsp fish sauce
- 1/2 tsp salt
- 2 Tbsp lime juice
- 1 tsp brown sugar
- 2 cloves garlic, minced
- 1/8 tsp powdered ginger
- 2 scallions, thinly sliced
Sauce
- 1/2 cup mayonnaise
- 3 Tbsp sweet Thai chili sauce
- 1 Tbsp honey
- 1/2 tsp sriracha sauce
Turkey Patties
- 1 lb ground turkey
- 1/4 cup Thai sweet chili sauce
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 green onions, thinly sliced
- 2 Tbsp fresh cilantro, chopped
- 1 Tbsp soy sauce
- 1/2 tsp sesame oil
- 1/4 tsp red pepper flakes (optional)
- 1/4 cup panko breadcrumbs
4 brioche or potato buns, toasted
Instructions
Make your pickled cucumbers:
- In a medium saucepan on the stovetop add the water, lime juice, brown sugar and salt. Head until simmering. Pour over cucumbers and chilis making sure they are fully covered (submerged). Let sit until ready to use.
Make your cabbage mixture:
- In a mixing bowl add in your fish sauce, salt, lime juice, brown sugar, garlic, powdered sugar, scallions, basil, cilantro and mix together. Lastly add your cabbage/carrots mixture and stir until it is all well combined. Let sit until ready to use.
Make your sauce:
- Add in your mayo, Thai sweet chili sauce, honey and sriracha sauce into a small mixing bowl and stir until everything is combined. Set aside (in the refrigerator) until ready to assemble burgers.
Prepare your turkey burger patties:
- Add in all of your burger ingredients into a large bowl and mix thoroughly until well incorporated. Form into 4 burger patties.
- Pre-heat your grill or skillet on your stovetop. Grill/cook, turning halfway through, until browned, about 5 minutes per side.
- In another skillet or on your grill – toast your buns until barely golden and get ready to assemble your burger.
Assemble burgers:
- With your toasted bun ready, add your sauce, burger, picked cucumber/chilies and then cabbage on top. Add your bun top (with more sauce if you’d like) to make the most delicious burger & enjoy!
