Ingredients
- 1 lb broccoli/cauliflower florets
- 3 cup cooked chicken (diced or rotisserie)
- 8 oz cream cheese, softened
- 1 cup whipping cream
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tsp dijon mustard
- 1 tsp Worcestershire sauce
- salt & pepper to taste
- 2 cup grated cheddar cheese, divided
- 1/2 cup parmesan cheese
- 1/4 cup butter, melted
- 1 cup panko breadcrumbs
Instructions
- Take out the cream cheese from the refrigerator at least an hour prior or microwave it for bursts of 20 seconds until it is VERY soft.
- Boil a pot of water for the broccoli/cauliflower. While you wait for it to boil – make your sauce. Also metl your butter & et cool for the breadcrumbs at end.
- Preheat oven to 375 F. You may want a cookie sheet or something under the catch anything that may spill over.
- Once the water is boiling, add the broccoli & cauliflower & cook for 2-3 minutes, drain well & set aside.
- In a medium saucepan, add the whipping cream, cream cheese, onion powder, garlic powder, mustard, Worcestershire sauce and salt/pepper. Cook it over medium high heat, stirring nearly constantly until it is all melted together (about 5 minutes).
- Add in half of the cheddar cheese – stir until smooth.
- Combine chicken, sauce and broccoli/cauliflower and mix until well combined.
- Pour into a baking dish – spreading into an even layer. Top with remaining cheddar & parmesan cheese.
- Combine melted butter & panko and top casserole with breadcrumb mixture.
- Bake for 20 minutes (uncovered) until golden brown. You can broil the last few minutes to get it lightly crunch (watch it carefully so it does not burn). Let sit 5 minutes before serving.
