Ingredients
- 1 lb ground turkey
- 1 garlic clove, minced
- 1/2 cup onion, chopped
- 1/2 tsp oregano
- 1/2 cup red bell pepper, chopped
- 2 1/2 cup sweet potato, diced
- 1 zucchini, diced
- 1/2 tsp dijon mustard
- 1/3 cup tomato sauce
- 5 cups cauliflower rice
- 1/8 tsp red pepper
- 1 Tbsp olive oil
- 1/4 cup beef broth
- salt & pepper to taste
Instructions
- In a skillet, heat the olive oil over medium high heat.
- Add the ground turkey & garlic. Stir occasionally & cook for about 7 minutes until the meat is no longer pink. remove from pan & set aside.
- Add the onions, red bell peppers to the same skillet and cook for 3-4 minutes or until the onions are soft. If needed. add a bit more olive oil to help saute the veggies.
- Add the sweet potato and beef broth. Cook for 5-6 minutes. Put a lid on the skillet so the steam helps cook the potato faster.
- Add the zucchini and cook for 3 minutes.
- Return the ground turkey burger to the skillet & mix everything together.
- Add the dijon mustard, tomato sauce, oregano, red pepper and salt/pepper to taste. Cook for 1-2 minutes more.
- Serve with cooked cauliflower rice and garnish with fresh parsley.
