Chocolate Eclair Cake

Ingredients
Cake:
- graham crackers (1 package)
- 2 small boxes of instant vanilla pudding
- 3 cups of milk
- 1 large tub of cool whip
- chocolate frosting
Frosting:
- 2 3/4 cups confectioners’ sugar
- 6 Tbsp unsweetened cocoa powder
- 6 Tbsp butter, at room temperature
- 5 Tbsp evaporated milk
- 1 tsp vanilla
Instructions
- Mix your pudding and milk together and refrigerate until set.
- Fold in cool whip with your pudding mixture (after it has set).
- While pudding mixture is in refrigerator make frosting. Sift together confectioners’ sugar & cocoa powder in a medium bowl.
- Cream butter in a large bowl until smooth. Gradually beat in sugar mixture alternating with evaporated milk. Blend in vanilla.
- Beat mixture on high speed until light and fluffy. Adjust consistency with more milk or sugar, if desired.
- In a 9×13 cake pan, layer graham crackers.
- Add half of the pudding mixture.
- Add another layer of graham crackers and then the rest of your pudding mixture on top of the crackers.
- Top with chocolate frosting. (Tip: we warmed up our frosting to make it more loose to spread easily!)
- Refrigerate several hours. Enjoy!
Notes
- We kept our pudding and cool whip separate and did layers of crackers, pudding, then cool whip (doing that twice) and the topped with chocolate frosting. So if you wanted to combine the pudding and cool whip you can – but it still works out if you keep them separate also!
