Ingredients

  • 1 cup whole milk
  • 4 eggs
  • 3 Tbsp sugar
  • 2 tsp vanilla
  • 1/2 tsp almond extract
  • 1/4 tsp salt
  • 9 slices day-old Texas toast*, cut into 3/4 inch cubes
  • 1 cup mixed fresh berries, such as raspberries, quartered strawberries, and/or blueberries
  • 1/2 of an 8-oz. package cream cheese, cut into small cubes
  • 1/3 cup slivered almonds (optional)
  • maple syrup

Instructions

  • Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Grease twelve 2 1/2-inch nonstick muffin cups.
  • Combine Ingredients: In a large bowl, whisk together the first six ingredients (from your recipe). Add the bread cubes, berries, and cream cheese cubes, then toss gently to coat everything evenly.
  • Fill Muffin Cups: Divide the mixture evenly among the prepared muffin cups. They will be very full and mounded.
  • Add Topping (Optional): If using, sprinkle slivered almonds over the top of each muffin.
  • Bake: Bake for 18-22 minutes, or until the muffins are puffed and golden. A thermometer inserted into the center of a muffin should read 165°F (74°C).
  • Serve: Serve the muffins warm with your favorite syrup.

Notes

* Because the bread cubes in these muffins need to be dry to soak up the milk mixture, it is recommended using day old bread.  Or you can bake bread cubes in a single layer on a large sheet pan 10 minutes at 200F to dry them out quickly.
