Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts, or boneless skinless thighs, thinly sliced into 1/2 inch pieces
  • 3 red bell peppers, chopped
  • 1 white or yellow onion, chopped
  • 2 Tbsp oil
  • 2 tsp yellow curry paste
  • 2 Tbsp red curry paste
  • 1/21 tsp crushed red pepper flakes, more to taste
  • 1 can coconut milk
  • 1 can coconut cream
  • 1 Tbsp brown sugar
  • 2 Tbsp fish sauce
  • 1 tsp salt, more to taste
  • 1/2 cup cold water + 2 Tbsp corn starch

Instructions

  • In a large skillet over medium heat, combine chicken, peppers, and onions.  Drizzle with oil, give it a good stir to coat, and cook for 6-8 minutes, stirring occasionally til chicken is just cooked through.
  • Add coconut cream, red curry past, yellow curry paste.  Bring to a low boil.
  • Add coconut milk, stir to combine and cook for 1-2 more minutes.
  • Whisk corn starch into water until dissolved.  Add to the pan and stir 1-2 minutes til thickened.
  • Add brown sugar, fish sauce, crushed red pepper flakes and salt – stirring until everything is combined.  Let simmer for 6-8 minutes.
  • Taste, add more salt if needed.  Serve immediately over steamed white rice or rice noodles.  Garnish with fresh cilantro if desired.
